Sweet Potato-Red Lentil Curry

Winter means soup, stew, and curry season.

Personally, I enjoy curling up with something warm and soothing after a long, chilly day. 

And this dish made with red lentils is just the thing. 

It has a really thick, creamy texture, is simple to make, and the perfect amount of spice.

I believe this to be the ideal vegan red curry, made with creamy red lentils and hearty sweet potatoes!

In the US, green, brown, and red lentils are the three varieties most frequently found in grocery shops. 

All three are easy to include into a variety of meals, have a high protein and fiber content, and cook rather quickly (at least in the land of beans). 

They're presumably among the legumes that people eat the most frequently worldwide.
